Season chicken fillets with black pepper, onion powder, garlic powder, dried basil, salt, and olive oil. Make sure both sides are evenly coated.
Heat a grill pan and cook the chicken until fully cooked and slightly golden. Set aside.
To prepare the pesto sauce, blend fresh basil, garlic, pine nuts (if using), lemon juice, Parmesan cheese, and olive oil in a blender until smooth.
Slice the tomatoes into thick slices, season with salt and pepper, and set aside.
Assemble the sandwich: Spread a generous layer of pesto sauce on the bread. Add the grilled chicken, mozzarella cheese, and tomato slices.
Grill the sandwich in a panini press or a hot grill pan until the bread is crispy and the cheese is melted.
