Description

A unique and flavorful Cherry Kebab recipe, combining succulent meatballs with a tangy-sweet cherry sauce for a delightful culinary experience.

Instructions

  1. In a bowl, mix and knead all the kofta ingredients together for 3-4 minutes until well combined and fibrous.
  2. Form the kofta into small balls and arrange them on a baking sheet. Place in the refrigerator to firm up for one hour.
  3. Remove the pits from the cherries using your preferred method. Reserve a few whole cherries for garnish.
  4. In a food processor, blend the remaining cherries with the water and sugar until it becomes a juice-like consistency. Set aside 1/4 cup of this cherry juice.
  5. In a hot pan over high heat, add the oil and butter. Sauté the kofta from all sides until browned and half-cooked.
  6. Pour in the cherry juice, pomegranate molasses, salt, and pepper. Mix everything together, then reduce the heat to low, cover, and let it simmer for 5-7 minutes.
  7. Mix the cornstarch with the reserved 1/4 cup of cherry juice. Add this mixture to the kofta and sauce, mix well, and let it cook for 3-5 minutes until the sauce thickens.
  8. Sprinkle some parsley and mix, then transfer to a serving dish.
  9. Garnish with the remaining parsley and toasted pine nuts / almonds. Serve with white rice or pita (Lebanese) bread.
