Instructions
Pound each piece of chicken out to an even thickness between two sheets of plastic bag using the flat side of a meat mallet. Pound gently to not tear the chicken.
Season the chicken with mustard, garlic powder, onion powder, salt, and pepper. Mix well using your hands.
In a bowl, add breadcrumbs and season with dried basil, salt, pepper, and shredded parmesan or cheddar cheese.
In another bowl, whisk 3 eggs together.
Place each chicken piece on a flat surface and spread some basil pesto sauce, add roast beef, a cheddar cheese slice, and some shredded mozzarella cheese.
Wrap tightly and secure with toothpicks. Repeat with all chicken pieces.
Dip into the whisked eggs. Coat with seasoned breadcrumbs.
Deep fry in hot oil until golden.
