Cheesy Baked Cauliflower

Preheat your oven to 200°C (390°F).
Toss the cauliflower florets with salt, black pepper, and olive oil. Spread them on a baking tray and bake for 30 minutes until slightly roasted.
In a pan, melt the butter and add the flour. Stir continuously until combined.
Gradually add the milk while stirring to make a smooth sauce.
Crumble the vegetable stock cube into the sauce, then add black pepper and paprika.
Stir in the mozzarella and cheddar cheese until melted and creamy.
Pour the cheese sauce over the roasted cauliflower in a baking dish.
Sprinkle additional cheese on top and bake for another 15 minutes.
