Basmati Rice – The Restaurant Way

Instructions

  1. Soak the rice in hot water & vinegar for 15 minutes then wash well & drain.
  2. In a pan, add oil and sear the diced onion.
  3. Add grated carrot and tomatoes. Add the green chili pepper (whole).
  4. Add the dried and powder spices.
  5. Add the broth (for every 1 cup rice, 2 cups liquid).
  6. When water/ broth is hot, add the rice and stir well.
  7. Cover the pan and put on high heat until all water is absorbed.
  8. Then put on low heat for 10 minutes.
  9. In a pan, add butter or ghee then the nuts until roasted.
  10. Transfer the rice to serving dish, add the nuts & raisins on top and enjoy. (you can skip the nuts).
