Instructions
Sugar Syrup
In a pan, off heat, mix sugar and water well.
Turn on heat and bring to a boil.
Add lemon juice and glucose honey or regular honey (optional).
Leave on low heat for 10 minutes then transfer to a bowl and set aside.
Balah El Sham
In a pan, add butter, water, sugar & salt.
Bring to a boil then add flour and lower the heat. Keep mixing until dough is formed.
Spread the dough on a plate and let it cool completely.
Transfer dough to electric mixer. Add cornstarch & semolina. A
Add the eggs one by one and mix in between. (Add vanilla but that's optional). You can do this step manually with hands but will take some time.
Use cone and plastic bag to shape the balah el sham.
In a pan, off heat, in cold oil (at room temperature), start shaping the balah el sham. (Watch video for technique).
Put the pan on medium heat and fry until golden.
Drain the balah el sham from the oil then transfer to the syrup bowl. Drain again and enjoy.
