Authentic Egyptian Roz Moammar

Preheat your oven to 200°C.

Grease a deep clay pot or baking dish with ghee.

Add the washed rice to the pot.

Heat the ghee and vegetable oil in a pan, then pour it over the rice and mix well.

In a separate bowl, mix hot milk with salt and sugar.

Pour the milk mixture over the rice, ensuring the rice is fully submerged.

Add yogurt and cream (if using) to the rice mixture and stir gently.

Let the rice soak in the milk for 1 hour to absorb flavors.

Place the pot on the bottom rack of the preheated oven and bake for 15–20 minutes until the milk is mostly absorbed.

Move the pot to the middle rack, reduce the oven temperature to 160°C, and turn on the broiler at low heat.

Allow the top to develop a golden color, watching closely to avoid burning.

Remove the dish from the oven and top it with a piece of fresh cream (optional).

Let the rice cool for 10 minutes before serving. Enjoy!
