In a large bowl, mix olive oil, lemon zest, apple cider vinegar, 7-spice mix, chicken bouillon, sumac, pomegranate molasses, garlic powder, salt, and black pepper.
Add the boneless chicken thighs to the marinade and coat them well.
No need for extended marination; the flavors infuse quickly.
Thread the marinated chicken pieces onto wooden skewers.
At this point, you can freeze them for later use or proceed to cook.
Preheat the air fryer to 180°C .
Place the skewers in the air fryer basket, ensuring they don’t overlap.
Cook for 20 minutes, flipping halfway through for even browning.
Sprinkle with more sumac and top with pickled onions.
