Break eggs in a bowl

Whisk until combined

Heat oil or butter in a non stick pan
(preferably a square shaped one) -
Gently add 1/3 of the eggs mixture when the oil/butter is hot and let it rest for a few seconds

When the eggs have set at the bottom fold over into a log shape.
