Instructions
Add a spoonful of the recipe spices to the oxtail and mix, then add onion, carrot, bay leaf, and water. Let it cook on low heat for 3 hours until the oxtail is tender.
Grease a clay pot with ghee, then add the Egyptian rice and a spoonful of the recipe spices; mix. Add fresh milk, a spoonful of baladi ghee, and oxtail cooking broth.
Place the pot in the oven at 170°C for 2 hours until the rice is cooked.
Spread the cream over the surface of the baked rice, then return to the oven to brown the top until golden.
Add the cooked oxtail on top.
Chef Note
You can prepare the oxtail in advance or use pre-boned oxtail. It is preferable to use short-grain Egyptian rice for a creamy texture.
