Egyptian Moussaka
Description
A rich baked moussaka made with fried eggplant, zucchini, peppers, and spiced minced meat with a surprising touch of raisins, all layered with a flavorful tomato sauce.

Instructions
Heat oil & ghee in a pan.
Add garlic and a splash of vinegar, then pour in the tomato juice.
Season with salt, black pepper, sugar, and a stock cube.
Let the sauce simmer until slightly thickened, then set aside.
Add the cooked minced meat to a pan.
Add raisins to the cooked minced meat and mix well.
Fry the eggplant, zucchini, green pepper, hot pepper, and onion until lightly golden.
Start layering in a baking dish. Spread some sauce at the bottom, then arrange half of the fried vegetables. Add the minced meat mixture in the center, then top with the remaining vegetables.
Pour the remaining sauce evenly over the top. Add a few tomato slices and a hot pepper for garnish.
Bake in a preheated oven at 180°C for about 45 minutes.
