In a bowl, combine the olive oil, chopped parsley, fresh thyme, minced garlic, salt, paprika, black pepper, onion powder, and lemon juice. Stir the mixture well until everything is combined.
Use kitchen shears to cut along both sides of the chicken's spine and remove it, along with the neck.
Flip the chicken over and press down on the breast with your hands until you hear the breastbone crack.
Rub a small amount of the marinade onto your desired vegetables.
Use the remaining marinade to coat the chicken thoroughly, making sure to season it all over, including under the skin.
Preheat the oven to 220°C with the heat coming from both the top and bottom. Place the chicken on a baking sheet with the vegetables and put it in the oven.
Every 20 minutes, take the chicken out and baste it with the juices that have collected on the baking sheet.
Return it to the oven. After 45 minutes to an hour, the chicken will be fully cooked and juicy.
