Instructions
-
Place a heavy-bottomed skillet or pot over medium heat.
-
Add granulated sugar to the pan.
-
Resist the urge to stir constantly at first. Instead, swirl the pan gently every few minutes to ensure even melting.
-
As the sugar starts to melt and clump, begin stirring constantly until it is completely dissolved and forms a smooth, amber-colored liquid. This process can take 12-15 minutes. Do not let it burn!
-
Remove the melted sugar from the heat.
-
Add the room temperature, soft butter. The mixture will bubble vigorously. Don't worry about the foam or bubbles.
-
Stir continuously until the butter is fully incorporated and the mixture becomes smooth and uniform.
-
Return the skillet to very low heat. Pour in the heavy cream. Add salt.
-
Continue stirring gently until the sauce reaches a beautiful, smooth consistency. Don't overcook it on this step.
-
Remove from heat immediately once the desired consistency is achieved.
-
Transfer the caramel sauce to a heatproof jar or container. Let it cool completely at room temperature for about an hour. The sauce will thicken significantly as it cools.
-
Store in an airtight container in the refrigerator for up to 2-3 weeks. Reheat gently in the microwave or on the stovetop to use.
