  1. Place a heavy-bottomed skillet or pot over medium heat.
  2. Add granulated sugar to the pan.
  3. Resist the urge to stir constantly at first. Instead, swirl the pan gently every few minutes to ensure even melting.
  4. As the sugar starts to melt and clump, begin stirring constantly until it is completely dissolved and forms a smooth, amber-colored liquid. This process can take 12-15 minutes. Do not let it burn!
  5. Remove the melted sugar from the heat.
  6. Add the room temperature, soft butter. The mixture will bubble vigorously. Don't worry about the foam or bubbles.
  7. Stir continuously until the butter is fully incorporated and the mixture becomes smooth and uniform.
  8. Return the skillet to very low heat. Pour in the heavy cream. Add salt.
  9. Continue stirring gently until the sauce reaches a beautiful, smooth consistency. Don't overcook it on this step.
  10. Remove from heat immediately once the desired consistency is achieved.
  11. Transfer the caramel sauce to a heatproof jar or container. Let it cool completely at room temperature for about an hour. The sauce will thicken significantly as it cools.
  12. Store in an airtight container in the refrigerator for up to 2-3 weeks. Reheat gently in the microwave or on the stovetop to use.
