Season the Figs with Salt and Pepper. In a hot skillet, add a splash of Olive Oil and grill the Halloumi and Figs for 2 minutes on each side until they get nice grill marks, then remove them from the heat.

Mix all the Dressing ingredients together in a bowl.

Mix the Arugula with a bit of Dressing until all leaves are coated. Arrange it as a base in a serving dish, then top with the grilled Halloumi, Figs, and Pistachios or your chosen Nuts. Drizzle with a final bit of Dressing on top.
