In a blender, blend yogurt, tomato paste, olive oil, lemon juice, crushed garlic, and all the spices (salt, black pepper, paprika, thyme, chili powder). Stir well to combine.

Add the boneless chicken thighs to the marinade and coat them thoroughly.

Thread the marinated chicken onto skewers, stacking them neatly to resemble a shawarma spit.

Place the skewers in the air fryer. Set the program to chicken and cook, flipping the skewers every 10 minutes until they achieve a beautiful golden color.

Slice onions and sprinkle sumac over them. Toss the onions with the sumac to enhance the flavor.

In a pan, heat tomato paste with thyme, paprika, and olive oil. Add a splash of water and stir until the sauce thickens slightly. Soak the bread in the mixture before using it to make sandwiches.
