Cut the eggplants, potatoes, tomatoes, and bell peppers into cubes.
Sprinkle salt over the vegetables. You can fry them in oil, but for a lighter version, air-fry with some oil.
In a chopper, add minced garlic, bell pepper, vinegar, and a pinch of cumin. Stir until fragrant.
Add the tomato sauce and bring to a simmer. Adjust seasoning with salt, black pepper, paprika, and cumin.
Add the sautéed eggplants, bell peppers, and potatoes to the pan. Stir to combine.
Add the cubed tomatoes, allowing them to cook and blend with the sauce.
Simmer for a few minutes until all the flavors meld together.
Serve hot and enjoy the rich aroma and flavor.
