Instructions
Combine all the marinade ingredients (olive oil, lemon juice, vinegar, ketchup, yogurt, pomegranate molasses, minced garlic, and spices) in a bowl.
Add the chicken and mix well.
Finely chop the parsley, dice the tomatoes, and slice the red onions.
In a bowl, mix all the salad ingredients (parsley, tomatoes, onions, salt, pepper, sumac, lemon juice, and olive oil). Set aside.
In a bowl, whisk together the yogurt, mayonnaise, minced garlic, vinegar, salt, lemon juice, and vegetable oil. Mix well.
Heat a pan over medium-high heat.
Once the pan is hot, add the marinated chicken, spreading it out so it doesn't overlap. Let it cook without stirring until it develops a golden-brown color.
Once it reaches your desired color and texture, flip it to cook the other side for a few more minutes.
To serve, place the cooked shawarma in pita bread or your choice of bread. Add the garlic sauce, shawarma salad, and pickles (if desired).
