Preheat the oven to 180°C.

Score the flesh of the eggplants in a crisscross pattern.

Place the eggplants on a baking tray, drizzle with olive oil, and season with salt, pepper, and paprika.

Roast in the oven for about 20 minutes, or until soft.

In a saucepan, heat some olive oil and sauté minced garlic until fragrant.

Add chopped bell peppers and cook briefly.

Stir in the tomato paste, salt, pepper, and thyme.

Add diced tomatoes and let the sauce simmer until thickened.

Remove the eggplants from the oven and mash the flesh gently with a fork.

Fill the eggplants with the prepared pizza sauce.

Top with sliced black olives and grated mozzarella cheese.
