Macaroni with Liver in Clay Pots

Instructions

Heat oil in a pan and sauté minced garlic.

Add the liver slices, black pepper, and cumin, and cook until the liver is browned.

Toss in green chili and green bell pepper, stirring well.

Add a splash of vinegar, mix, and set aside.

In the same pan, melt butter or ghee, then sauté garlic until fragrant.

Add tomato paste, followed by fresh tomato juice, salt, black pepper, and mixed spices.

Crumble in the stock cube and simmer until the sauce thickens.

Grease individual clay or aluminum pots with butter or ghee.

Layer the cooked liver mixture at the bottom of each pot.

Pour a portion of the sauce over the liver.

Add raw penne pasta on top and cover with more sauce until just submerged.

Cover the pots with foil and bake in a preheated oven at 180°C for 45 minutes, or until the pasta is cooked through.
