Instructions
Heat olive oil in a deep pot over medium heat. Add whole spices, garlic head, loomi, chopped onion, and grated carrot. Sauté until fragrant.
Place the chicken over the mixture, adding paprika, chicken spices, black pepper, stock cube, and salt.
Stir in tomato paste and add enough water to cover the chicken. Simmer until the chicken is fully cooked.
Prepare the glaze by mixing all its ingredients in a small bowl. Brush it over the cooked chicken.
Roast the chicken in a preheated oven for 15 minutes.
Cook basmati rice in the same pot used for boiling the chicken, adding kabsa spices and salt. Let it simmer until done.
