  1. In a bowl, combine ricotta cheese, Parmesan or Romano cheese, mozzarella cheese, thyme, and sundried tomatoes.
  2. Mix them well until the ingredients are evenly incorporated.
  3. Take boneless chicken (shish tawook) spread a layer of the cheese and sundried tomato mixture onto the chicken.
  4. Roll the chicken tightly, enclosing the filling inside.
  5. Secure the roll with toothpicks to hold it together. " see video"
  6. Season the rolled chicken with salt and pepper on each side.
  7. Heat a pot or large skillet over medium-high heat.
  8. Add the rolled chicken to the pot and cook it on each side until it is browned and sealed.
  9. Once the chicken is browned, cover the pot and reduce the heat to low.
  10. Allow the chicken to cook fully.
  11. In the same pot, add minced garlic and stir fry it until fragrant.
  12. Add the spinach and cook it until wilted.
  13. Pour cooking cream into the pot with the garlic and spinach.
  14. Stir well to combine and bring the mixture to a simmer.
  15. Return the cooked chicken to the pot with the creamed spinach and garlic.
  16. Gently coat the chicken with the sauce.
